Method of preparation:

Stir continuously until the pudding begins to thicken and begins to bubble. Take the pot off the heat, add the essence, mix well and pour the hot pudding into small bowls.

Heat the milk a little over low heat, dissolve the sugar and yeast, then let it rest for 10 minutes.

We sift the flour and in its middle we make a hole. Beat the eggs lightly with a fork and then add the sour cream - be sure to use ingredients at room temperature. If they are cold from the fridge, lightly heat them on the fire.

Put the milk and yeast in the middle of the flour, pour the mixture of eggs and sour cream and start kneading. Add salt and continue kneading until you get an elastic dough, homogeneous, soft but non-sticky. If necessary, add flour or milk. Leave to rise for an hour in a warm place away from currents & # 8211, preferably in a lightly heated oven.

For the filling, proceed as follows. Mix the butter with the sugar until it becomes creamy. Divide the composition in two and in one of them we will put cocoa, in the other the vanilla sugar. Let's put it aside.

After the dough has doubled in volume, we put it on the floured table, we spread it in a rectangular sheet that is not very thin, about 1 cm thick. We spread the soft butter (without cocoa) evenly on the surface of the dough. Fold the dough as in the picture and let it cool for half an hour.

Take the dough out of the fridge and spread it again in a rectangular sheet. We proceed approximately the same as for the puff pastry, but the technique is much simplified. Now grease the dough with butter and cocoa cream. This time we will make a roll. Let it cool for half an hour.

Preheat the oven to 180 degrees and grease with butter 12 forms of muffins (preferably with higher walls)

Take the roll out of the fridge. With a thread, cut 4cm thick spirals, place them in the prepared forms, grease them with yolk and leave them to rise for another 30 minutes.
Bake the spirals for 20-25 minutes until nicely browned. After taking them out of the oven, let them cool for another 10 minutes, then we can serve them with gusto. Enjoy!
